Cellulose casings are made from natural plant fibers such as cotton linters, woodpulp, and hemp paper. Characteristics include high strength and toughness, with high permeability to air, water and smoke. Cellulose casings are not permeable, and must be peeled before the sausage is consumed. Special peeling coatings are used. They do not adhere to the meat under high shrinkage applications. Cellulose casings can be processed in high temperature smokehouses and are permeable to smoke and air while fully wet.
Cellulose casings are made from regenerated cellulose and are supplied as highly compacted shirred sticks for use on automated stuffing and peeling equipment. No soaking is required.
Clear casing are supplied with stripes if needed for recipe identification, or peeling control guides.
Non-Transferable Color casing is used as peeling control guide or to differentiate recipes.
Transfer Color casings have water-soluble USFDA-approved dyes added to the casing to create a red or orange color on the surface of the meat.. These are suitable for certain markets who prefer the dark red color.
Printed Cellulose Casings use food approved inks. These casings can create an impermeable barrier against smoke, thereby producing a picture or pattern on the sausage’s surface after the casing is peeled. Also the printed casings can be used for promotional advertising when the sausages are packed with the casing left on (not peeled) for certain consumer markets.
